Tomato and Garlic Spaghetti Squash

It’s pasta reinvented! Honestly, I dubious of spaghetti squash. But I have read online reviews on the deliciousness of spaghetti squash and some even swear it tastes like regular spaghetti. You must really try out this recipe to believe it. The sauce brings out the sweetness of the squash plus the aroma is so heavenly with the basil leaves and essential oil. This stuff is just too good not to eat again and again.


What you need: (Makes 2 servings)

1 Small Spaghetti Squash

1/2 Cup fresh basil, chopped

1 Can of Diced Tomatoes

2 Cloves of Garlic

1/4 Cup of Onions

2 Tbsp of Extra Virgin Olive Oil

Salt and pepper to taste

Pinch of sugar

1 drop of doTERRA Basil essential oil

What to do:

  • Start by pre-heating the oven to 400F/200C.

  • Cut spaghetti squash in half and scoop out seeds. Brush with olive oil, season with salt and pepper and place down on parchment paper on a baking pan. Put in oven for 35-40 minutes.

  • While the squash is cooking you can start preparing the sauce by placing a pan on low-medium heat and adding the olive oil. Next, add the garlic, onions, diced tomatoes, basil, add a pinch of sugar and a drop of doTERRA Basil essential oil. Stir for about 2 minutes. Once the garlic and tomato sauce is ready you can set it aside on low heat and wait for the squash to be done.

  • Carefully remove spaghetti squash from oven after 40 minutes and scrape with fork to create the “spaghetti”. Add the sauce to top and enjoy.
